Ingredients

3 garlic cloves

½ to 1 red chili

1 1/2 lbs broccoli

3 tbsp olive oil

2 oz Parmesan
Method

Peel and finely slice the garlic. Halve the chili, remove the seeds and slice thinly. Trim the broccoli and cut into equal sized florets.

Boil the broccoli florets for about three minutes in water, drain and plunge into cold water.

In a large frying pan over medium heat and add the olive oil and garlic and fry for 1-2 minutes, or until just golden.

Drain the garlic and toss it with the broccoli back in the frying pan, add the sliced red chili and season generously with salt and pepper. Fry for two minutes until hot.

Finely grate over the Parmesan and serve.
